Yeah, if I ate all that on such a short mileage overnight hike with only ~1300m elevation gain I'd gain weight! The more you eat the more you have to poop too!
So kinda overthinking it with the schedule and calorie count I'd say. Unless you have a health issue, this kind of meal planning detail only applies to thru hikes with resupply.
Since temps might drop below freezing, I'd just bring whatever boil-n-eat freeze dried meal I had handy, a few Snickers for energy boosts, and have a peanutbutter/Nutella/banana sandwich I make at home for the next morning's hike out.
