I made these Friday evening for a hike I did on Saturday -

Raw Cookie Dough Balls

Ingredients:

2/3 cup raw cashews
1/3 cup old-fashioned oats
2 Tbsp raw honey
1 Tbsp dark brown sugar
½ tsp ground cinnamon
½ tsp pure vanilla extract
Pinch fine sea salt
2 Tbsp dark chocolate chips
Directions:

Add all the ingredients, except for chocolate, into a food processor. Process on high until finely chopped, scraping sides as needed. Add in chocolate, process on high until chopped up.

Make 1 Tablespoon scoops (a 1 Tbsp disher works well), roll in your hands to pack. Chill until set, then pack into a bag or lightweight container. If in a bag, store in a cup or cooking pot so they don’t get crushed.

Makes about 10 balls.

Good looking snack food (and a fine pic). How well did the balls hold up during the hike? I'd be worried about them melting into a gooey mess, unless it was pretty cool outside.

They held up, but I wouldn't recommend above say low 70's for carrying. At those temps it stays stable :-)
