I live in Castle Rock. It's a suburb south of Denver within 15 minutes of Centennial. There are some good trail running options nearby in Castlewood Canyon State Park. Castle Rock actually has some bike races that are threaded through the town each summer. But I can't really give you too much in specifics for that part. I know the type of distances you are probably biking are probably tens of miles. One option may be the frontage road that runs parallel to I25 south of Castle Rock, you can then turn up east on Crystal Valley Parkway to South Lake Gulch Rd and go north for a few till you hit Plum Creek Parkway to Ridgeroad and then head back towards Founders Parkway. You could probably make a good loop out of that .
As far as the town, I love Castle Rock. It is a distinct town of it's own, is about 1000ft+ higher than Denver so is a bit cooler in the summer and tends to attract more snow.
