saw an interesting meal over the weekend.

1.75 ounces Doritos bag (Nacho flavor)
pre cooked Taco seasoned meat (beef or chicken) in ziplock bag
diced tomatoes
shredded lettuce
shredded cheese
salsa

heat water and put meat bag into water to heat meat
crunch up doritos and open bag
dump meat into doritos bag add tomatoes, lettuce, cheese, and salsa to taste.

it was pretty quick and simple and tasted great. of course i asked to try it.

i think two bags would be about right for one serving while backpacking.

How long would the lettuce last (assuming shredded iceberg)?

in cooler weather a few days i'm sure. this is a great meal for the first few days for sure.

You can always sub a small head of cabbage. I have had cabbage un-refrigerated for at least a week in tropical conditions no problem.

Yep, shredded cabbage carries well, so does shredded broccoli - both in the ready to go section of the produce dept. As for lettuce? Couple days in cool weather is about right!

When served in the bag, my scouts call those Walking Tacos. It's a very close cousin to the Frito Pie (bag of Fritos corn chips, chili, & cheese).

That sounds good and sparks a whole load of other ideas. :)

By the way... cabbage dehydrates beautifully. You could dry some shredded cabbage and jicama (a Mexican root veggie) and quickly rehydrate them for this salad on the 10th or 15th day of a trip without issue.
