Yes... it works very well. Cook it first... then dry the strands on mesh lined dehydrator trays. This takes about 6 to 8 hours in my Excalibur at 135°F. I simply cover it with boiling water to rehydrate.

I find that, like sweet potatoes, spaghetti squash will lose a bit of flavor if kept for more than 3 or 4 months after drying so I tend to dry it closer to my trips.
