I'll be moving to Latvia in a year or so and wanted to know if anyone has experience or ideas backpacking in the Baltics (I know, it's extremely flat) or if there are great backcountry trails in Finland, Norway, etc. that I could get to with a relatively short flight.

Evan, I suggest you take a look at Nordic Lightpacking
you will find a list of blogs from lightweight backpackers in that region. On the blogs you will find many trip suggestions.

http://luontoon.fi there is all what you need to know... it is also in english.

Nuuksio nationalpark is near Helsinki-Vantaa airport. You can find it in luontoon.fi website. It is great place and not so flat, no mountains but very beautiful place!
