Check out www.ReallyBigCameras.com. I use one of their traveler models as my backpacking tripod -- and I shoot with a 4x5 monorail.
If you're looking at tripods with built-in ballheads, keep your checkbook closed. They're not worth spending money on. For whatever reason, no one who makes tripod legs worth anything includes a head of any kind.
If you're looking for a pan/tilt head, look at the Manfrotto line and Gitzo lines, or if you want to save weight, check these guys out: http://acratech.net. They're among the lightest ballheads out there. If you want to go whole-hog, look at Wimberly. They are pretty much the last word in gimbal mounts for cameras.
