If by backpacking you mean good to read while backpacking (ie having something to do with nature/critique of society) I'd say anything by Edward Abbey

I'll second "The Snow Leopard".

You may also want to read:

"Arctic Dreams", by Barry Lopez,
"Desert Solitaire", by Edward Abbey,
"This Cold Heaven", by Gretel Ehrlich,
"Walking the High Ridge" by Robert Michael Pyle
"Having Everything RIght" by Kim R. Stafford
"The Island Within" by Richard Nelson
"The Four-Cornered Falcon" by Reg Saner
"Common Ground", by Robert Finch
"Walking Towards Walden", by John Hanson Mitchell
"A Time of Gifts" and "Between the Woods and the Water", by Patrick Leigh Fermor (about his walk from Holland to Istanbul in 1933, just before WW1)
"Travels with a Donkey", by Robert Louis Stevenson
"Clear Waters Rising, A Mountain Walk Across Europe", by Nicholas Crane
"The Maine Woods", by Henry David THoreau
"A Thousand Mile Walk to the Gulf", by John Muir

Just some suggestions...
