I use a fleece cap, but I haven't really needed to go down to low with my set up either.

Cool weather, a fleece hat that covers my ears.
A littler cooler to cold, a fleece balaclava.
A little colder to downright brrrr, a down hat or combination with fleece balaclava. (My nose gets cold easily)

I've used my quilt to about the freezing point and used a fleece hat when I did. All my other trips have just been cool weather and I've worn a wool beanie then.

Temps above freezing: possumdown hat and/or a powerstretch balaclava (3 oz for both).

Below freezing: I swap my cocoon pullover for the cocoon hoody, usually bringing the hat and balaclava along too.

fleece helmet liner and balaclava worked fine down to about 10F.

down to near freezing I normally use a polarbuff made into a watch cap though I have used a fleece cap as well. In colder conditions either an old GoLite Snow Cap or a down Balaclava made by Down Works of Santa Cruz.

Above 45 I use the hood of my Cocoon hoody and sometimes layer with a light fleece cap.

Below that, I use a Cocoon balaclava with my hoody.

REALLY cold and I'm usually using a hooded bag.

Headgear, who needs it.
That's why you make your own quilt that already has a head enclosure.

On the colder nights of my trips I had the hood of my synthetic jacket (REI Gossamer), a synthetic beanie, and a buff over my face.
I'm a big fan of hooded jackets with quilts, great combo.

two relevant things about night-time headwear for quilt users:

- try to re-use what you already have anyway.

- be able to create a non-interrupted layer of insulation around head and neck, like a balaclava does, with the option of covering mouth and nose too.

A balaclava is perfect but no so versatile during the day. For not too cold temps, I usually take a fleece cap and a buff. For colder weather, I add a powerstretch balaclava or, colder yet, a polarguard or down one.
