MH
MH has had their Phantom series EN tested (look on their site) and their recommended temp ratings are supported, no matter what brand you prefer. These are excellent bags.

Strengthening Knees
Some good commentary. Also don't forget the flexibility and strength of your hamstrings. The most neglected part of the lower body. Strong hamstrings offset some knee infelxibility.
