I use a merino buff doubled over as a beanie. It's longer length than a poly buff provides better coverage over my ears than the Smartwool beanie I own.

I am also 6'1" and use a regular length EE quilt. No problems. I am a side sleeper with legs slightly bent most of the time, but even stretched out I am comfortable. I do use a wide quilt.
